Sin Gusano Jabali is produced in the community of San Luis Amatlan, Oaxaca by maestro mezcalero Camilo Garcia Gutierrez. Instead of crushing the cooked agave with a traditional stone wheel, Gutierrez decided that the more modern mechanical chipper was a better way of taming the jabalí. Due to the complexities of working with this agave, this batch had to be distilled a third time to harness the awesome power of this intense agave. This mezcal was released as part of a limited edition tasting set.
Sin Gusano Project
The Sin Gusano Project aims to inspire consumers to ethically explore the wonders of handmade agave spirits, which are traditionally known as Mezcal. The brand operates bars and events, and travels regularly through Mexico to source an evolving range of rare distillates. Many of these artisanal spirits haven’t been experienced outside of the communities in which they are made until now.
Sin Gusano launched the Mezcal Appreciation Society (M.A.S.) in spring 2020. M.A.S. is the UK’s only agave spirits subscription club, providing members with regular shipments of agave spirits and educational materials. Membership to the Mezcal Appreciation Society can be purchased here.

Distinctive Jabali nose with sweet fruitiness and green.
On the palate, there’s a lot going on that it’s hard to explain, but it’s so fresh and delicious.

5 reviewsTasted at London Mezcal Week 2019. This was the stand-out winner of a very strong line-up from Sin Gusano. End of a long day of tasting, so notes are patchy at best! Intense and delicious with a touch of pear-drop, tropical fruit and cheesy funk on the nose and with super complex, earth fresh green agave and a mouth-filling creaminess on the palate and long finish. There is a lot going on with this. All good. I had to go a back for a second taste. Brilliant example of how good jabalí can be.
