Sotol Onó is produced by Maestro Sotolero Gerardo Ruelas, who produces a wide range of sotols under various brands and marks.
About this sotol
Sotol Onó is made with Dasylirion Cedrosanum, which takes 12 to 15 years to reach maturity in the wild. The sotol are pulled out of the earth with axes, and the spiny leaves are cut from the piñas to transport to the Vinata. Once in the Vinata, Maestro Gerardo Ruelas roasts the piñas for about 3 days, then grinds them by hand using axes and knives. The plants then ferment for 5 and 7 days, depending on the weather, before being distilled.

Sotol Ono is made from 100 % Dasylirion Cedrosanum. It is handcrafted in Aldama, Chihuahua by Gerardo Ruelas who is a third generation Maestro Sotolero, a central part of a family that has produced Sotol in the state of Chihuahua for generations.

It’s decent for the price. it has saved me at shitty bars when there was no good mezcal or tequila, and thrice I found this lurking in the corner of the back bar.

Almost no nose compared to more complex sotols.Viscous mouthfeel. Definitely has a pine and herbaceous start to the flavors, but then they just plain fall off a cliff. No finish. Not many mid-taste flavors either. Unlike the previous reviewer, I get ZERO bite whatsoever.

26 reviewsAroma of pine, mint, and trailside herbs. It’s quite sweet on the front, vaguely honeysuckle, jackfruit, and vanilla, but finishing very green, piney, herbal, and somewhat bitter. Very warm for 45%! I like the bite. There are definitely some nice mineral components coming through and a buttery mouthfeel. Smoke is buried somewhere in there as well, but is clearly not a goal of this one. Solid.

169 reviewsBought it for the price point, $38. Lime [peel], minerals, fig, heat, green walnut. Reserved, smells like the maker though. On the palate it’s classic enough, I’m guessing this brand is using wider cuts on the still or something to cut costs, there’s a decent heat to it for 45%. I’ll have fun using it in cocktails, just a little sharp for sipping.
