Chacolo Ixtero Verde

Lot 01 4-22

This is easily one of the most complex spirits I’ve ever tasted. The running list of what I get out of it keeps growing but the aromas are insane. Bright! Orange flowers, honey, cantaloupe, Meyer lemons, guava campechanas, brown butter and panna cotta are all distinctly there. The flavors are both congruent with the scent and notably different. Mint marigold, Arnold Palmer, honeydew, key limes, fruity coffee, molasses, chipotle powder, green tea, wildflowers, wormwood, tonic, dates, vinegar based bbq sauce. It lingers on one sip and on the next sip it dries out quickly.

This is definitely a harder mezcal to approach and get into, but a little patience and time with it and it becomes an absolute gem.

Country Time pink lemonade is so apt for this one! Smells like summer, warheads candy, grapefruit, mango, fresh strawberries and hay jump to your nose. The lemonade carries right into the taste but carries watermelon ripeness, bubblegum, palm sugar, and orange cream. Wraps up so quickly that it’s basically asking you to chug it. If there was ever a poolside bottle, this is it. Super complex bottle but so approachable, the more I drink the more I find.

Very soft and but overtly tropical on the nose, mango and pineapple yogurt, sherbet, thyme, lime pith, and cane sugar sweetness really carry the brunt of a really pleasant aroma. The taste is really interesting, almost apertif-y, and grassy in a lot of ways akin to a Clairin maybe? But dries out significantly into Thai basil, clay, and limestone minerality. Finish lingers and is pleasantly tannic and dry.

So much grape jelly and aloe jumping out of the glass! Hibiscus flowers and lemongrass in there too but the nose is so soft for how much it carries. Grape jelly continues once you sip, but has mango and guava cream to add to the texture, supple leather, clay, and faint smoke run the background. Trails off elegantly, with clay and very gentle floral bits.

Unreal stuff, unbelievable fresh and gentle for just how much is going on

Bay leaves, oregano, jalapeño, fresh cut cabbage and ripe summer cherries jump at your nose. Deep red fruits lead the palate with other dark berries, cherries, moss, and ash. Mouthfeel is very full and creamy. Cherry jam and cigar smoke leads you to a long and rich woody finish.

Insanely soft and tropical on the nose, sweet watermelon, cantaloupe, mango, snap peas, lemon zest and lime halves. I can’t help but keep coming back to specifically a Pecos cantaloupe on the palate with raw sugar and cinnamon. Soft clay and grapefruit bitterness. Smoke comes on about halfway through and lasts to the end, very mild with bits of dry hay

Deep smells. Wet leaves, ozone, black moss, whole leaf chewing tobacco, mahogany, plus some mildly sweet wood towards the end of the nose. Black soil/loam, brisket and cured meats, bay leaves, and tar carry the taste, very viscous but in a really desirable way. Long pleasantly bitter finish with wet sand and more ozone that transitions into a sweet/palo santo lift at the end.

Nose on this has heat to it but carries green notes, sweet mint, cut Serrano and delicate chamomile, all underlined by the scent of dry limestone. Dry stones underline the palate, with bits of Japanese sweet potato, salted cantaloupe, and white tea, leading into raw serrano carrying into classic tep pepper tones. Stone sticks through on the finish, prickly tep lingers with dried herbs and white flowers, and a pleasant bookstore dustiness to it.

Delicate, complex, and driving. Can’t sum it all up other than unreal.

Much of the same in terms of nose- black pepper, cabbage, hearty greens, and wet chalk. Deep palate that matches with caramel and other bits of roasted goodness. Carries into a pleasant pop of acidity and heat on the finish. The texture of this is incredible as well, viscous but not oily.

A pleasant nose of cedar and saline minerality, with a bright bit of ripe strawberry as well. Nose fades into delicate wet leather and clay. The wet leather continues on into the palette where there’s a nice tone of more summer fruits juxtaposed by hardwoods like pecan and mesquite predominantly. This palette fades into a pleasant dry finish that reflects back to the salinity, with a pop of mint and tobacco on the tail end.

Might come across on the thin side text to some but overall delicious and crisp
