Ánimas Tobalá was produced by Don Rodulfo Juan Juarez in San Juan del Rio, Oaxaca. The agaves were wood-roasted in a stone horno, milled by horse-drawn tahona, and fermented with wild yeasts. This mezcal was double distilled in a copper still.
Ánimas Mezcal
Mezcal Ánimas is an offering from their master mezcalero to summon Mayahuel, the female deity of maguey. In this ritual the spirits of the agave plant give life to the sacred rabbits that, as a liquid spirit, allow us to enter a mystical world.

Nose – Vanilla Sprite. Chalk dust.
Palate – Medium+ viscosity. Spearmint. Tiger lily petals. A tiny bit of basil. A Dr. Pepper ice cream float. This has a soda like mouth feel – a sweet, carbonation tingle – very nice. I really like this and the Animas brand as a whole!

The palate has notes of dark chocolate, freshly chopped cilantro, icy cold Dr Pepper, and Sprite on a hot day. I’ve had Tobala from this producer in the past, and they’ve all been really good. This one is no exception. This is very nice Tobala.
