About this destilado de agave

Ánimas Cuixe was produced by mezcalero Luis Angeles Reyes in Santiago Matatlán, Oaxaca using maguey Cuixe (Agave Karwinskii). The agaves are cooked in a conical ground oven, milled with a tahona, fermented in wooden vats, and double distilled in copper pot stills. Less than 200 bottles of this aguardiente de agave was produced to celebrate the 4-year anniversary of Mezcal Ánimas.

Ánimas Mezcal

Mezcal Ánimas is an offering from their master mezcalero to summon Mayahuel, the female deity of maguey. In this ritual the spirits of the agave plant give life to the sacred rabbits that, as a liquid spirit, allow us to enter a mystical world.

This has grown on me quite a bit since first opening it. There are some vegetal green candy notes with cinnamon and wood spice. The dry Kawinskii-ness of this mezcal is very present along with tart wood. Super approachable overall with a tangy tart finish.

Sweet aromas of tropical fruit like pomegranate, papaya, and guava. The palate is rich with smoked sweet fruit. Notes of grilled pineapple, green mango, and under-ripe papaya. There’s also some lime and sweet cream notes on this. Really well balanced with a long finish. This is very very nice.
