Chacolo Ixtero Amarillo Puntas is a destilado de agave from Zapotitlan de Vadillo, Jalisco. The maguey Ixtero Amarillo is an Agave rhodacantha. The agave are cooked in an underground oven and milled by hand with axes. Once cooked and milled, the agave are fermented naturally in wooden tinas with mountain spring water. Finally, they are double distilled in a Filipino style still. This specific release is the “Puntas,” which is a higher ABV cut from the still.

The Partida family, lead by Don Macario, has been making their iconic “mezcales” for 5 generations in Zapotitlan de Vadillo, Jalisco, however due to legalities they can neither call their product mezcal nor tequila. They are renowned among mezcaleros and mezcal aficionados for the amazing spirits that are meticulously made from the 15 different agave varietals that they have been collecting from their region for three generations. These varietals include 14 A. angustifolia sub varietals and 1 A. rhodacantha sub-varietal.

Note: You can definitely smell this is higher ABV, but not in a bad way. Smells bright, with notes of tart fruit, tobacco, citrus, and minerals.
Flavors: Sour orange, tobaccos, agave sweetness. It has a slightly lactic note similar to unsweetened greek yogurt, leaving your mouth dry. If you like sweet tart candies you would love this.
The finish is medium – long, you can tell this is higher abv but it doesn’t have a bad alcohol burn. This was very enjoyable, glad I picked up a bottle.
