Cumbrita Lechuguilla from Dolores Gonzales Torres was produced using Agave shrevei in Batopilas, Chihuahua. The agaves were crushed by hand with an ax, fermented in a single underground fermentation vat made over 100 years ago, and distilled in a heritage still called a tren, which is made from a stainless steel pot, an Encino oak ring and cylindrical chamber, and a copper condenser on top.

Cumbrita de la Sierra is a producer-owned agave spirits brand from maestro Dolores González Torres in the state of Chihuahua. Maestro Dolores is well-known for his spirits production. The state of Chihuahua is home to a wide ranch of seasonal weather and temperatures. As such, there will be variability from batch to batch of Cumbrita de la Sierra depending on the season in which it’s made.

Nose: gamey smell, leather, light cheddar cheese, light caramel sweetness
Palate: caramel, flowers, minerality, goats milk caramel
Finish: light caramel. Strong but tasty minerality
Thoughts: I really like this. The bottle has been open awhile so I’m sure some of the flavors are a bit muted. If you’re looking caramel this is the one. I’ve tasted nothing with a better caramel flavor. So overall the theme for this is caramel. The minerality is also great. It’s hard to describe but that mineral flavor can be harsh and bitter sometimes. This is quite pleasant though

Review #39: milk, bubble gum, light cream, and coconut are the dominant notes on the nose and palate. Rosemary, burnt herbs, light smoke, light grassiness, and clay come after and stay until the finish.
I side by sided this with his no brand lechuguilla and they were similar, but this had a bit less of the sweet florals and a bit more herbs. It was also a bit lighter in it’s flavor profile and mouthfeel than I would have liked compared to the no brand, but I’m sure the abv difference had an impact. Definitely worth trying for the uniqueness of the flavor
