About this destilado de agave

Cumbrita Lechuguilla / Chawi from Dolores Gonzales Torres was produced using 60% Agave shrevei and 40% Agave multifilifera in Batopilas, Chihuahua. The agaves were crushed by hand with an ax, fermented in an underground fermentation vat, and distilled in a heritage still called a tren, which is made from a stainless steel pot, an Encino oak ring and cylindrical chamber, and a copper condenser on top.

The state of Chihuahua is home to a wide ranch of seasonal weather and temperatures. As such, there will be variability from batch to batch of Cumbrita de la Sierra depending on the season in which it’s made.

Review #141: On the nose is bubblegum, strawberries and cream, vanilla, fresh milk, cotton, and white flowers.

The palate has bubblegum, mozzarella, cream, vanilla, banana, strawberry, wet clay, canteloupe, apricot jam, dark cherry, and some candied rose and other florals on the finish.

This is the like the no brand/lechuguilla Cumbrita dialed up a notch. The nose is rich, the fruit notes are bold, and it’s very silky and delicate but at the same time very expressive. It’s very easygoing to drink but has a lot of depth to it. The chawi must be working some magic here because this is excellent.
