Gusto Historico Bicuixe from Eusebio Santos was produced in Miahuatlan, Oaxaca. This was made with 100% maguey Bicuixe (Agave karwinskii). While Bicuixe is often a component of an Ensamble from this region, it is uncommon to see a mezcal produced entirely from Bicuixe. The agaves are cooked in an underground oven, milled by tahona, fermented with open air yeasts, and double distilled in a copper alembique still.
