The name Maguey bicuishe (or bicuixe) is referring to an Agave karwinskii. It’s one of the less-commonly used karwinskii, but mezcals made with it have similar notes to the madre-cuishe. Generally, the Maguey bicuishe takes 15 years to mature to it’s most intense and attractive flavors. It grows in some of the more arid regions like Miahuatlan, Oaxaca.
