Pulquero

Maguey pulquero from Oaxaca was previously classified by the CRM as Agave salmiana. New classification for this agave in Oaxaca now lists it as Agave atrovirens.

When drinking mezcal made with Maguey pulquero, it’s important to note that these mezcals are typically produced like any other mezcal, harvesting and cooking the agave that can also be used in Pulque (Salmiana/Atrovirens) in a traditional underground pit oven. We note this because there are a few mezcals on the market that have Pulque added to kick-start the agave fermentation process. This produces very different results.
