Ojo de Dios Espadin is produced by maestro Francisco Ortiz, a 3rd generation mezcalero in San Luis del Rio, Oaxaca. The agaves are cooked in an underground pit oven, milled by a donkey-drawn tahona, naturally fermented in wooden barrels, and double distilled in 250 liter copper pot stills.

153 reviewsVery surprisingly for an espadín, there are both aromas and flavours of unpeeled almond, perhaps even a marzipan sweetness for a second. Pralines, then rich agave flavours, nice structure. I am probably bumping half a star for the price, but this is a really nice offering. Light to medium smoke. If you can find this, you have an excellent mixer and brilliant on its own if you want to introduce mezcal to someone who is new to the concept.
