About this destilado de agave

Pal’alma Michoacán – Cupreata was produced by maestra mezcalera María E. Pérez and her family in Rio de Parras, Michoacán. She refers to this maguey as Penca Ancha, which is an Agave cupreata. The agaves are milled by hand with wooden mallets. 10-15 liters of pulque is added to the fermentation to kickstart the yeast-sugar interactions. It was distilled in a Filipino still.

Pal’alma (or Mezcalito Pal’alma) is curated by Erick Rodriguez. Erick also bottles under the brand Almamezcalera. Known by many as the Indiana Jones of Mezcal, Erick Rodriguez works with agave spirits producers from the 20+ states of Mexico. Anywhere he finds agave fields and a freshwater stream, there’s a good chance that someone is making mezcal nearby. He has a private tasting room in Mexico City, which we visited in 2017, and wrote about in our post Almamezcalera & Mezcalito Pal’alma.

52% abv, Mach 2018 Lot: #11 34 months rested in glass, bottle 50/60

I picked up a bottle from Erick when I was in Mexico City in March, 2022. This expression is quite superb and delicious. This tastes quite a bit different than the Cupreata from Guerrero that is also in the Pal’Alma lineup however the quality is on par with those expressions. Love what the pulque brings to the flavor profile and a bit of the mouthfeel.

Nose: sweet cream, strawberries, mild cheese, clementines, and skittles

Palate: Pink bubblegum, background of the pulque used to start fermentation, hint of funk, mild heat for 52% abv, strawberries and cream on the backend, and red vines.
