About this mezcal

Cómplice Tobalá is produced using 100% Agave potatorum (Maguey Tobalá) by Mezcalero Ignacio Martínez in San Dionisio Ocotepec, Oaxaca. After the agaves reach maturity after approximately 15 years they are harvested and cooked in a river-stone pit oven. The cooked agaves are crushed by a horse-drawn tahona. After fermenting in oak wood vats, it is double distilled in copper stills. This mezcal has herbal notes along with citrus and fruit.

This mezcal is part of the limited edition Cómplice de Pasión series made from wild agave.

Cómplice Mezcal

The name of Cómplice Mezcal comes from a story. One night, a man learned of the existence of a legendary mezcalero who had the gift of capturing the essence of a person in the drops of mezcal. The man was determined to find the master. After a long period of searching, he finally found the legendary teacher. After talking for a long time, the master agreed to reveal his secrets, giving rise to a mutual complicity: whenever any of the descendants of the man found the teacher, he would teach him to capture the essence of a person in a mezcal in exchange for keeping the secret within the family. This is how, generation after generation, members of the family have maintained the unique flavor and secret of the mezcal: Cómplice Mezcal.

Enjoying this more than some of the earlier reviews. It has this sweet whiskey quality to it. Like apple brandy. It is kind of malty with a full flavored character. Lot EXT0001 2020.

Lot EXT0001 2020. This was my least favorite of the complice I tried. It’s kind of sour and just not that enjoyable for me.

Lot EXT0001 2020. Aromas of fermenting sour apples, figs, dried dates, and overripe banana. The palate has similar sour and overripe fruit flavors. The body is light and easy without any burn or heat.
