About this destilado de agave

Gusto Historico Mexicano, Bicuixe, y Tobaxiche Amarillo was produced by Juan Garcia in the community of Miahuatlan, Oaxaca. The agaves are cooked in an underground pit oven, ground by tahona, fermented with open air yeasts, and single distilled in a copper refrescadera still. As of January 2022, Juan Garcia is 67 years, and has been producing mezcal regularly since the age of 15. He is a fifth generation mezcalero and only produces mezcal in very small batches.
