About this destilado de agave

La Remilgosa Verde is made with maguey Verde (Agave salmiana crassispina) in Nombre de Dios, Durango. Maestro vinatero Gilberto Roldan roasts the agave in an underground pit oven, mills them by hand with an axe and wooden mallet, ferments using in-ground wooden vats with spring water, and double distills in a copper pot and serpentine condenser.

Sipping this after Gilberto’s Cenzio and I’m more into this. There is similar frontier mustiness to the mezcal but the agave flavors are prominent with citrus notes. An approachable 51% mezcal for sure. Batch 202108. Bottle 233/480.

Batch 202108. Bottle 233/480. Aromas of fresh aloe, corn husks, dry dill, and uncut cabbage. The palate is soft for 51% ABV. The notes are subtle yet complex. Hints of celery, mustard greens, vanilla bean, and serrano peppers. This is really nice and it opens up in the glass the longer it sits.
