Mexicat Sotol is made with Dasylirion plants in the Madera region of Chihuahua, Mexico. Locally the plants are called Sereque. The sotol plants are cooked in an underground oven, ground using a mechanical shredder, and fermented in 200 liter plastic and 1000 liter stainless steel containers.
