Miel de Tierra Espadin is made in the style of Oaxacan mezcal. The agave Espadin more closely aligns with Oaxaca style, and the agave are crushed by tahona rather than with a mechanical shredder like their other mezcals. The agave are then fermented in open air and distilled in a copper still.
Miel de Tierra Mezcal
Miel de Tierra means Earth’s Honey, and the name comes from the sweet, amber-flushed tree sap, which can only be found in virgin barrels made of fresh natural oak timber. Given the name, Miel de Tierra has a robust barrel-aging program and they also have several unaged releases. Their location in southern Zacatecas makes them a fairly unique brand internationally.
