Sacrificio Tobala is made with maguey tobala (Agave potatorum) by mezcalero Carlos Garcia Cruz in Tlacolula, Oaxaca. The agave are grown in the center of a wild oak forest and organically harvested. Tasting and aromatic notes include fallen leaves, wildflowers, moss, stones, and rain.

Sacrificio Mezcal

Destilería Sacrificio was conceived in 2011 with the mission of creating premium hand crafted mezcal. Mezcal Sacrificio is harvested and produced in Tlacolula, Oaxaca. According to Sacrificio, their mezcal is best to drink it at 18 Celsius (66 Farenheit), sipped but also as a mixer for drinks, especially with mild citric fruits like lemon, orange and grapefruit.

Good thing I got it on sale. There are some off flavors in there, just don’t know where they came from. Pepper and a lot of bite. Gets better as the bottle goes down with the Tobala really coming through.

A gentle nose with mild sweet fruity notes, some mamey sapote, caramelized pumpkin, bitter almond, a touch of vanilla, green notes of aloe, some dried basil, and cheese stuffed green olives in brine. On the tongue smoke comes through, full and ashy. Mostly sweet though, flavors include agave nectar, fire roasted sweet peppers, sweet potato, but also a spicy hint of black pepper, and even a little fresh mint. The body is full and viscous, coating the mouth nicely with an almost syrupy feel. The legs in the glass are pretty nice too. The long finish is semidry with a lingering sweetness but plenty of minerals, some acetone, mango peel, licorice root or sarsaparilla, and the slightest hint of charred oak. This Tobala is definitely one of the sweetest mezclas I’ve tasted, and certainly uniquely flavored compared with Espadin.

Very smooth with a nice peppery bite finish. Nothing jumps out, but it goes down easy straight. Reminds me of a better Ilegal joven espadin.
