5 Sentidos Tobala from Israel Palestino has notes of birthday cake frosting, a buttery sake-like approach, and hints of roasted molasses.
About this destilado de agave
5 Sentidos Tobala from Israel Palestino is produced in San Juan Bautista Jayacatlán, Oaxaca. A batch of this was imported into the US as an exclusive for West Lakeview Liquors, Chicago (lot WLV01). This very small batch was only 60 litres total, with just 20 bottles going to the US. Maestro mezcalero Israel Palestino still maintains the local tradition of fermenting his cooked agave in 40 liter and 70 liter clay pots. This was imported to celebrate the 30th anniversary of the West Lakeview Liquors.
5 Sentidos
5 Sentidos (or Cinco Sentidos) is named after the five senses that their mezcaleros use to produce their agave spirits. The producers of this mezcal do not use any model machinery or tools, being guided only by their senses throughout the production process. The brand was launched by El Destilado restaurant in centro Oaxaca. The restaurant is known for it’s creative menu, unique cocktails, and exception agave spirits. The brand is a curated tour of Mexico with a wide range of expressions that are made by some of the best mezcaleros in the region. Cinco Sentidos is uncertified mezcal and is labeled as “Destilado de Agave”.

161 reviewsa beautiful spirit!i ordered this through an on line vendor in chicago about 2 years ago.like another reviewer stated, this was a very small batch of 20 bottles.the nose reminds me of icing on a freshly made cake.the palate starts with baked sugar with hints of cinnamon.midway the taste of agave fruit comes through and the finish has some mild smoke with a little birthday cake.very gentle heat and a total treat.
