Convite Ensamble Silvestre

Convite Ensamble Silvestre is produced traditionally in the beautiful Zapotec mountains of San Baltazar Guelavila, Oaxaca

About this mezcal

Convite Ensamble Silvestre is made with wild maguey Tepextate, Tobalá, Madrecuishe, Lumbre and Tobasiche. The agave are cooked in an underground pit oven, milled by a horse-drawn tahona, naturally fermented with spring water, and double distilled in a copper alembic still. The production of this mezcal is supervised by mezcalero Cosme “Tucho” Hernández and his brother Daniel. There are some batches of this Ensamble that also include wild agave Coyote.

Nose – Very grassy. Shitake mushroom. Liquid hand soap.

Palate – Icing sugar sweetness. Vermouth. A slight jalapeño pepper spiciness. A floral soapiness to it. Not great value here for a sipping mezcal.

Complex for sure, but all over the place… and not in a good way. Wood up front, followed by musty army surplus, then a left turn into bitter campari-like tones and rhubarb. Gonna need some time to digest this one, but for now, 3.5/5

Lot DC19. Madrecuixe/Tepextate/Tobalá/Coyote/Tobaziche ensamble. A very pleasant surprise in a flight with several other ensambles – the first time I have tasted Convite. A biscuity aroma leads the way to creamy, nutty flavours. There is also vermouth and violets (in particular, Scandinavian violet pastilles!). A very complex and well-balanced spirit.
