About this destilado de agave

El Destilado Bicuixe is made with maguey Bicuixe (agave Karwinskii) in San Isidro Guishe, Oaxaca by Atenogenes Garcia. The agave are cooked in an underground oven with Encino Oak, mashed by tahona, fermented with well water, and double distilled in copper.

El Destilado

While some of the El Destilado brand’s agave distillates are sourced from some of the same producers as the 5 Sentidos brand, the El Destilado spirits brand is otherwise not directly related to the El Destilado restaurant in Oaxaca City. The brand was founded by Michael Sager and Marcis Dzelzainis, who own the Sager + Wilde Restaurant and Wine Bar in London.

The nose has some of the familiar roast parsnip elements, with a layer of menthol/eucalyptus and a touch of spice…maybe sweet cinnamon or nutmeg.

Outstanding richness on the palate, mouthcoating and oily with an incredibly long finish. Up front the root veg return, but now with a tropical fruit coating; passion fruit and papaya. Minerality on the finish, something slightly “slate-y”.

As it closes, it has an incredible richness with a paprika like smoke.
