About this destilado de agave
El Destilado Tobaziche is made by Tio Pedro Pascual Hernandez Arrellanes in Santa Catarina Minas, Oaxaca. The cooked agave are mashed by hand with wooden mallets, fermented with well water in open pine tanks, and double distilled in clay pots.
While some of the El Destilado brand’s agave distillates are sourced from some of the same producers as the 5 Sentidos brand, the El Destilado spirits brand is otherwise not directly related to the El Destilado restaurant in Oaxaca City. The brand was founded by Michael Sager and Marcis Dzelzainis, who own the Sager + Wilde Restaurant and Wine Bar in London.

Release 01, distilled February 2018. This one is a bit difficult to describe because, at the same time as it is full of flavours, it is also very balanced, so the flavours mingle into one pleasant whole. There are notes of bell peppers, coffee, rubber, sugar cane and a bit of salt, but the harmonious whole is the defining character. 4+.
