Pluma Negra Tobala is an Artisinal mezcal made by maestro mezcalero Rodolfo Hernández Aguilar using 8-12 year old agave.
About this mezcal
Pluma Negra Tobala is made with wild maguey Tobala that are harvested in the semi-tropical mountain climate of San Juan del Rio, Oaxaca. The agave are cooked in an underground oven, milled by a horse-drawn tahona, fermented in open-air pine vats using naturally occurring yeasts, and double distilled in a copper pot still. This mezcal has delicate aromas of chocolate, plums, and a slight touch of tobacco. It tastes of sweet pineapple, mango, and a light tone of peppermint and cinnamon.

Nose – Subtle sweet tropical aromas. Honeycomb. Slightly starchy (baby red potato). Very clean.
Palate – Dried papaya. Dried apricot. Heat is a tad light for 48% ABV. Sprite soda and baked green apple in the long, tasty finish. This is a crushable mezcal. Dangerously good!

8 reviewsThis was my favorite of all the Pluma Negra expressions I tasted. Cardamon, pickled herring, mint, bee pollen and dragon fruit on the nose. On the flavor profile I get rock fruit, chives and artesanal chocolate. Super enjoyable. I will be keeping a bottle of this around .

717 reviewsLot 002-TOB. Clean nose, with aromas of rosemary, sage, grilled potatoes, apricot, and dried tobacco. The palate has notes of green apple, pineapple, mango, red Jolly Ranchers, leather, and a dash of oregano. This is really nice and easily enjoyable.

661 reviewsAn enjoyable Tobala with tons of green notes. I tasted a few different Tobalas tonight and this stands on its own. There is a pepperiness here as if these agaves were planted near Maguey Tepeztate or peppercorns. Little bit of clove and some cilantro. For me, Tobalas offer up a wide variety of flavors that aren’t necessarily as consistent as other types of agave. This is leaning more towards dark vegetal and spicy versus fruity. I’m enjoying it. 48%, lot 002-TOB.
