About this destilado de agave
Distilled by maestro mezcalero Delfino Tobón Mejía in the verdant mountain valley of San Pablo Ameyaltepec, this crisp and bright Pechuga uses a once-distilled batch of locally-grown maguey Azul (Agave tequilana weber) as the base spirit. For the second distillation Delfino adds raw chicken, green apple, plátano macho, star anise, fennel, cinnamon, chocolate, and almonds, amongst other ingredients, to the boiling chamber of his custom made three-plate stainless steel & copper still. The result is a mezcal as brilliant and alive as the springs that give life to the
dessert mountains that surround San Pablo.
5 Sentidos
5 Sentidos is named after the five senses that their mezcaleros use to produce their agave spirits. The producers of this mezcal do not use any model machinery or tools, being guided only by their senses throughout the production process. The brand was launched by El Destilado restaurant in centro Oaxaca. The restaurant is known for it’s creative menu, unique cocktails, and exception agave spirits. The brand is a curated tour of Mexico with a wide range of expressions that are made by some of the best mezcaleros in the region. Cinco Sentidos is uncertified mezcal and is labeled as “Destilado de Agave”.

Palate – A complete anise bomb to start. It took a couple sips for the other flavors to take hold. The meat component is like a BBQ’d chicken breast marinated for days in Jägermeister which goes well into the finish and aftertaste. Finish is also dry. All said, I happen to like Jägermeister, so I like this. But I can see how it may not be everyone’s jam.

Lovely festive mezcal, a bit too anise heavy. A friend said it tasted like Jagermeister. It might change over time. I love the unique qualities of this mezcal.
