Agua del Sol Tobala was produced by maestra mezcalera Berta Vasquez in San Baltazar Chichicapam, Oaxaca. The Agave potatorum was roasted over mesquite and encino in traditional underground pits and milled by horse-drawn tahona. They were then naturally fermented in sabino vats and double distilled on small copper alembic stills.
Agua del Sol
Agua del Sol was created by Felix Hernández Monterrosa and Adriana Correa, who are perhaps most well-known as the owners and operators of the Mezcales CUISH mezcalerias in Oaxaca City. Given the demands of the two mezcalerias, as well as some additional agave projects, the two of them created Agua del Sol with the intention of using to brand to present tiny batches of mezcal to the world.

Purchased this bottle about a year ago as Agua del Sol was starting to get US distribution. Really like that these bottles are an affordable price point (generally less than $90) and the quality of the product does not suffer. Perfumy and floral, some sweet papaya and tropical fruit flavors, nice even heat and round flavor. There may be some of the faint rubber taste mentioned by Jonny, but not the salinity that both Jonny and Zack mentioned. Not as much fruit or minerality that I have gotten from other tobalás, perhaps a tad thin on the mouthfeel for my taste and could be a bit more balanced as the heat is a bit sharp on the backend as Jonny notes. I definitely have had some better tobalás but this is not disappointing. Solid batch from Berta.

680 reviewsBatch X/2020, Bottle 21/96. Aromas of Sprite, peppermint, flan, new rubber, and sea salt. The palate is a bit thin with lots of smoke. Notes of dried leather, mesquite, diesel exhaust, and prickly pear cactus. This is kind of hot for 45%. Berta’s mezcals are very hit or miss for me, and while this one is not a total miss, it’s also not a hit, not something I’d reach for regularly.

Nose – A mix of Creme Soda and Sprite. Cheesecake base. Crabgrass.
Palate – Thin mouthfeel. Grassy. Cookies n’ Cream sweetness but I found myself digging a little too deep to find it. A distinct dryer sheet note in the finish. Dry aftertaste with a nice salinity. Instead of sweet and creamy like tobala mezcales I tend to enjoy, this is grassier, smokier and saltier in comparison.
