About this destilado de agave

Cinco Sentidos Delgado y Ancho was created by a small cooperative in the village of Xochipala Guerrero. Together they harvested 6 tons of wild agave “Delgado”, named for its remarkably thin leaves and 7 tons of wild agave “Ancho”, colloquially referred to as such due to its broad leafed “penca”. In response to seeing trees in the region be chopped down but not replanted, the co-op decided that a steam oven would be a more environmentally responsible method to cook their agaves.

5 Sentidos

5 Sentidos (or Cinco Sentidos) is named after the five senses that their mezcaleros use to produce their agave spirits. The producers of this mezcal do not use any model machinery or tools, being guided only by their senses throughout the production process. The brand was launched by El Destilado restaurant in centro Oaxaca. The restaurant is known for it’s creative menu, unique cocktails, and exception agave spirits. The brand is a curated tour of Mexico with a wide range of expressions that are made by some of the best mezcaleros in the region. Cinco Sentidos is uncertified mezcal and is labeled as “Destilado de Agave”.

Review #83: nose has strawberry, cherry, peach, mango, cream, bubblegum, mint, herbs, and pine.
Palate is full of creamy fruits like peach, strawberry, cherry, bubblegum, and on the finish is pine, mint, licorice, and bitter herbs.

I wouldn’t change a single thing about this. It’s unbelievably fruity. It makes your mouth water smelling it. The palate is such a burst of flavor. Even the smallest little sips are a flavor bomb, it is so rich. The herbal notes really take this to the next level though with their added complexity and lengthened finish. I will love to see more to come from this cooperative.

I believe there is only one batch of this stuff out there. This was the 47.7% batch.

Nose: Very fruity and sweet, almost candy like, mangoes, watermelon, bananas some even rotten, chalk and mineral undertones

Palate: Palate reminds me of some higher ester rums, it’s chalky banana runts and rotten pineapple, a little strawberry, the back of palate has some candy bitterness like sweetness overload and ice cream or frosting, coconut cream. Finish is a little more mineral with hints of herbs like basil and sage, trailing off into a longer more bittersweet, like twizzlers that turns into black licorice is the only way I can describe it

This stuff is awesome and super unique. If I had a mezcal I could show every friend who I want to change their perception of the spirit it would be this one. Just so different and lovely, a cool piece of the mezcal flavor spectrum.
