Tosba Pechuga de Borrego is a special batch of pechuga mezcal made with lamb (borrego) breast. It was created to celebrate the wedding between the founders of Tahona Mercado. Normally, mezcalero Edgar Gonzalez uses ingredients like wild pineapple, bananas, wild apples, and rice which are suspended in a cotton net in the the still for the third distillation, ensuring that all the vapors pass over the meat and condense into a delicious Mezcal de Pechuga.

Tosba Mezcal
Mezcal Tosba is a microbusiness founded by two cousins from San Cristóbal Lachirioag, Oaxaca, Mexico. While living in Silicon Valley, California in 1999, they were inspired and influenced by the entrepreneurialism that surrounded them. Concerned by the increasing migration from their home region of Cajonos-Villa Alta in the Sierra Juárez mountains, they decided to form a business that would rescue the disappearing mezcal production and bring economic opportunity to the area. Mezcal Tosba is created by using traditional, and what is now called sustainable, agricultural methods of harvesting and distillation passed down by generations of farmers and mezcaleros from the region of Cajonos-Villa Alta of the Sierra Juárez in the state of Oaxaca, Mexico.

11 reviewsLot 1, bottle 79/126. The first meat pechuga I’ve ever tried and (if other reviews are any indication), it may have spoiled me. There is nothing overpowering here—it’s all pretty subtle. I was expecting a bit of the lamb funk, but it makes me think more of a smoked turkey. There’s also something vaguely tropical and fruity that I couldn’t pick out until I saw Zack mention papaya. I like this one a lot and other people I’ve poured this for have as well.

I remember it being a bit strong and meaty. This has an array of subtle flavors of herbs, spices, and meat. It is quite good.. the umami note from one of the previous reviews is spot on. It is savory, not overpowering, and serves as a unique and exciting example of pechuga mezcal. Nice work Edgar and team! Bottle 31/126, lot 1.

Palate – Amazing mouthfeel – soft, slick and viscous. Papaya. Very tropical. White pepper heat. Cigar wrapper. Not meaty for me until the finish. An extremely long finish/aftertaste of barbequed lamb strips.
I BEGGED Edgar for a small bit to take home – he and Elisandro sorted me out with a 200 mL flask. They are so proud that this was made for Steven Sadri’s (Tahona Mercado) wedding. I’ll cherish every drop of this exceptional mezcal!

385 reviewsPechuga de Borrego, Tahona Exclusive. Neck and neck with Rainy Lalocura Pechuga for the best ive ever had. Wonderful umami mixed with tropical fruits and fresh herbs. Everything is extremely well integrated. Not a hint of harshness. Finish isnt short, nor overlong…. Pops on the tongue like a fresh crudo or fruit salad. Not super meaty… just super awesome
