Bicuishe (bicuixe) is a wild agave in the Karwinskii family. It’s one of the less-commonly used Karwinskii agave, but Mezcals made with it have similar notes to the Madre-Cuishe. Generally, the maguey Bicuishe takes 15 years to mature to it’s most intense and attractive flavors. It grows in some of the more arid regions like Miahuatlan, Oaxaca.
