Derrumbes San Luis Potosi is an example of a very particular style of mezcal crafted in the high altitude Central Mexican Plateau, in the state of San Luis Potosí. This mezcal is made from the region’s wild agave Salmiana, giving it a unique, vibrant flavor. Certain bottles list agave Crassispina as the subspecies. Despite its abundance, this type of agave has a very low yield. The mezcalero needs up to four times as much of it to create an equal amount of spirit when compared to the blue agave used in the tequila region. Grown in calcareous soils, this mezcal terrifically showcases its terroir characteristics, with chalky notes very evident in the flavor profile. Produced in an old traditional hacienda, above ground ovens known as hornos are used to cook the agave which mean their mezcal is not smoky. Once cooked, the agave is crushed by a tahona, fermented naturally with wild yeast, twice-distilled in small copper pot stills, and bottled around 43% ABV.

From Oaxaca to Michoacan and beyond, Derrumbes bottles many varieties of mezcal that are made using different agave and production methods. They have spirits from different states in Mexico, and they bottle some very small producers that are not available elsewhere.

In 2024, Gallo took an undisclosed stake in the company.

Wow, what a burst of jalapeño and cheese — both on the nose and on the palate. Serrano-wrapped dates, pine needles without the bitterness, sourdough white bread on the finish. I seriously love this, if I catch a bottle at some point I’d love to elaborate on the tasting notes. The reflex you get is to quit whatever conversation you had, then sit down in a corner and just explore this mezcal in quiet contemplation.

LOT 45 Dec. 2020, seems an exclusive batch for La maison du whisky:
I got my bottle! It needs time to improve the smell, but flavours are just as fascinating as that unknown batch above. Jalapeños, green bell pepper, sautéed chayotes, a hint of Serrano ham, figues rather than dates. Less lactic than the previous batch, rather 3% fat yoghurt than cheese, and a bit more grassy aftertaste. More vegetal and herbal generally, but that could change over time after opening the bottle. It lacks a bit of structure and aftertaste for a full score, but what a fascinating mezcal it is. You could try to imagine an ensamble of tepeztate, arroqueno, funky raicilla and a savoury pechuga (less of that last note in batch 45).

I feel like salmianas are a ‘love it or hate it’ agave. This one is delicious though, so guess I like them somewhat.
Strong smell & tastes of jalapeños & olive brine. Taste includes, but not limited to, honey, rotten fruit, bruised peaches, jalapeño poppers, and more. Complex and unique, and yet at least in my group, polarizing. I’ll probably upgrade this 200ml flask to a full bottle here soon. Great bottle to introduce to new mezcal curious friends, as it shows how crazy different and complex mezcal can be (as Rakhal also pointed out). More like 4.25

Earthy, rotten fruit nose. Great salty pepper flavor up front with very smooth finish. Could benefit from a bit more bite by upping the abv.

First off, the nose. Insane levels of jalapeño, freshly cut, focusing on the green flesh here. possibly something pickled. By something, we can only mean a jalapeño. Jalapeño in many forms I’d say.
The jalapeño doesn’t go anywhere when you start drinking. Maybe a bit of that bison grass vodka. a bit salty. As it sits in my cup, some hard aged cheese notes come out on the nose. the pickle idea turns to brine, and olives take center stage.
Comes out to a tune I don’t love, but give it some air and that one note goes on to add a few more. Definitely not sad to have a 750 of this

Great bottle for $40. Tastes like you picked up a wet rock at the beach and licked the underside. Strong fresh jalapeño vibes more than anything. I like it but you can definitely taste the lower ABV in this one.

Nose: Smells green and spicy – like chopping up jalapeños on a wood cutting board.

Palate: An initial lychee sweetness – subtle and lasts for a few seconds. Then an awesome fresh, fire-roasted jalapeño middle and finish (with a drop of honey).

This is a great, diverse bottle especially at the price point.

Batch 20 979/1720 This is a great Mezcal when drinking on a tight budget. Strong scent of smelly feet with a spicy flavor don’t sound too appealing but Mezcal Derrumbes San Luis Potosí is darn good despite being low on ABV. Give it a shot!

Bell peppers, clean wet rocks, but a bit of a strange vinegar/microbial funk in later bottles I’ve had. It’s a fine sipping spirit, but the $40 cost I’ve been paying in NYC means it’s not wasted in a cocktail, either. Plus a half star for the value and that pretty label. 😉

Straight up smokes jalapeño cream cheese. This is my first Salmiana, and while it is not my favorite agave, I am really giving it a fair shake.

Smoked jalapeño, bell pepper, butter, cream cheese, pepper jack cheese, peppercorn, salt, poblano, wet grass.

The smell is savory and funky. People aren’t kidding when they describe the nose of this as jalapenos and cheese. Palate is oily and vegetal, sweet, spicy and musty. I was overwhelmed by this originally, but it grew on me. The taste and nose rounded off a little bit after the bottle spent some time open. This is a complex and rewarding spirit, and for the price, it’s absolutely worth trying.

Lovely, very different mezcal. Sweet peppers, olive brine and mild cheesy funk on the nose, earthy and sweet taste with some of the same olive or slightly roasted poblanos. Finishes smooth and honey sweet.

Bottle 1346/1750 10/19. This is funky like Bootsy Collins. Has some pepper jack cheese on it. It’s very unique and worth trying, especially at the price. It just doesn’t speak to my taste, as something I would regularly drink.

Lot 4, distilled September 2015. This is undoubtedly a good quality mezcal (evidenced by the many positive reviews), but it doesn’t do it for me. I find it rather astringent and dry without much in terms of complexity. Perhaps a less-than-perfect batch?

Nose: Jalepeno poppers. Review over. (Jalepenos stuffed with crème cheese, wrapped in bacon, and cooked / grilled). This is the tail end of the bottle I’ve owned, and now it’s a little more floral and nopales-driven. The peppers still take center stage, with a lactic funky sweetness playing so well in between. Black peppercorn and bacon notes for the charry-savory element, though this wasn’t cooked in a smoke-driven process. Some light pineapple gone sour, oregano, and white corn on the edges of the popper profile.

Palate: Gentle entry that’s floral, with a wonderful midpalate that’s more agave driven and simplistic and pleasantly sweet. The finish is where the mild pepper sweetness comes to play with the cream cheese and light fatty char. Texture is nice, flavor is full enough, and it drinks well for its proof. Finish is there, but doesn’t linger with any off notes or stay in a way that’s overbearing.

Thoughts: What a stunner. For character and value, this is one of the most amazing spirits you could find in any shop, for any category. It’s a cocktailing dream, too.

Be aware, I know there will be some batch variation, and this is one of the ones I’ve liked most. I’m curious about the proofing decisions.

This mezcal got an extra half star for how underpriced it is. A flavor this distinctive could easily sell for more.

Jalapeños and crisp citrus notes on the nose, reminds me of the pepper snap that comes along with tequila. Much of the same on the pallet with a sweet, honey suckle finish. Almost leaves a spicy aftertaste. At $35 a bottle, it’s definitely a great way to venture outside of espadin while not breaking the bank.

Sweet first attack on tongue. Unique funky notes on nose translate well to the palate: pickled and seeded feta-stuffed jalapeno, in pickled radish brine, familiar agave white peppers and overcooked green beans giving way to a lime zest peppermint aftertaste. Really different for sure! Two too many left turns for my palate. Points for being one of the most unique tasting mezcals. Tasted it a year ago, but would give it another try seeing all these shining reviews.

Very good mezcal with an amazing price. Will definitely be one I continue to buy. The smell has some vanilla, leather, and floral. To the taste, there is some mint and pepper with a sweet vanilla finish.

I stumbled up this mezcal while searching through this website and I’m so glad that I did. The other reviews are spot on. This is super unique and an incredible value at less than $40 a bottle. It’s extremely approachable and floral. Almost minty in flavor with a vanilla finish that lingers. I’ll be buying this again for sure. My 3.5 star review is only a representation of taste. It’s easily 5/5 stars if you factor in value.

Smell starts withs sweet fruits, berrys and continues to cheese, strong cheese. Hints of pepper and leather.
In mouth, lightly smoked, more cheese, green apples, mineral. Sweet finish
